Chick Pea Tomato Feta Salad

Ever wonder why dogs love butt rubs so much? Ya, me too. Keiko won’t leave me alone, she’s playful and wants her nightly butt rub. Am I the only one with a dog that does this? Any time one of us is seated, she will snake herself under a knee and wait – tail wagging, and whine until she works herself up to a growl – growing more and more impatient. It’s actually kinda cute…

On a more somber note, tonight the CSP family gathers together to grieve the loss of Sergeant Chris Guari, my husband among them. I did not know him but my heart goes out to his family and friends, I am told he was a great man who dedicated his life to public service. Cancer is cruel and took his life far too early. RIP Sgt. Guari.

I turn to the kitchen when I am stressed, bored, emotional, off kilter… you get the picture. Tonight I needed to keep my mind and my hands busy so I prepared my FAVORITE after work snack.

Chick Pea Tomato Feta Salad

4 servings

Ingredients: 

2 cans of organic chick peas – drained and rinsed

4 oz feta

10.5 oz container of grape salad tomatoes – halved

2 tsp dried oregano

2-3 tbsp lemon juice – adjust to your liking

2 tbsp extra virgin olive oil + a drizzle

1/2 tsp sea salt

4-5 cracks of fresh ground pepper

Put everything in a bowl and gently fold with a wooden spoon, turning it over until everything is mixed together. *Folding as opposed to mixing keeps the casings from coming off the chick peas and the feta intact.

Enjoy as a snack any time of the day or as a light lunch. I love the acidity of the tomatoes, the hit of citrus from the lemon, and the pop of the chick pea’s – YUM!
